Cheese Souffle Stuffed Mushrooms


This recipe was an alternative to the high-fat stuffed mushrooms we all know and love. They had whipped egg whites, leeks, mustard, and cottage cheese. They were edible, but not yummy. The recipe clipping was labeled "lowfat appetizer" by my mom. It was from the Menomonee Falls Hosptial magazine from 2000.
